Persian Saffron Brittles for NOWRUZ - a Treat for the Dragons in the year of the Blue Tiger 2022

I'm a graphic designer, independent curator, and a calm Horse! I found the Hox zodiac project very interesting and lovely to my heart since I love animals and sincerely believe that we all share the same plate as the creatures of this planet. I'm Persian, and I LOVE food! I've decided to share the recipe for our magical treat on Nowruz - Persian New Year. Persian Saffron Brittle (Sohan Asali) is made of nuts, honey, butter, and sugar. But you have to be careful about your amount, as its tempting taste makes you forget the high sugar in it! All the ingredients are Dragon friendly, so I offer this sweet plate to the Dragons!


  • 1 cup sugar
  • Three tablespoons honey
  • Three tablespoons butter
  • 1 cup almond or other nuts
  • One tablespoon rosewater
  • 1/2 teaspoon ground saffron
  • One tablespoon of lemon juice for a shiny finish

    HOW TO prepare:

  • In a medium-sized saucepan, combine sugar, honey, and butter, and heat over low heat until the sugar is completely dissolved.

    Stir every once in a while, and make sure not to burn the sugar.

    toss in the almond, and continue to cook 

    Stir frequently

  • The sugar mixture should be golden brown at this stage and start to bubble.
  • Add in the rosewater and saffron and continue to simmer on low heat for another minute.
  • Carefully remove one spoonful of the mixture at a time and transfer it to the parchment paper, leaving one to two inches between each spoonful. Allow cooling thoroughly before handling.
  • Once cooled, keep the Sohan Asali in an airtight container.
  • It can also be garnished with finely chopped pistachios on top before the brittle starts to cool.
